With a simple home still like theamazing kit
(https://secure.brewhaus.ca/docs/amazingkit.pdf) would there be any methanol
to worry about? I've read in a previous post that one should discard the
first x amount of ml but if its collected in a bucket, it kinda mixes in and
isnt a traditional still....

The amount of methanol produced I think you'll find is so small that it's
not worth worrying about on health grounds. It does taste rather vile though
(unless it's the other esters etc that come off with the heads.

I discard the first 30cl or until the spirit tastes ok. I'm sure after the
stil has balanced, usually about 15 mins on full reflux discarding only 5cl
clears the methanol and this is for 5 uk gallons of 20% wash.

The story's about methanol poisoning are greatly exaggerated from the tales
of spirit being doctored with antifreeze.
